BBQ Chicken & Baked Potatoes

My husband is expected to be home around 5 tonight (hopefully) so I started my BBQ chicken in the crockpot about 12:30. Then my potatoes around 2:30.
Preparation
Below is the link to the BBQ chicken recipe -
(make sure you click the picture and it will take you to the page with the recipe. It's towards the bottom)
My changes to the recipe were as following -
I used half bottle of honey BBQ sauce then half bottle of regular BBQ sauce
White vinegar instead of regular vinegar
No red pepper flakes
I did as the directions said and threw frozen chicken breasts in the crockpot, mixed up the rest of the incredients and poured them ontop. I closed the crockpot and turned it on low!
Below is the link for the potatoes -
I didn't so much follow this recipe, I just liked how they styled the potatoes (Made it look more difficult than it was) First pre-heated my oven to 400 and then cleaned my potatoes. I decided to only style two, whereas the other 4 are not cut or de-skinned. After cutting and de-skinning the two, I put some Canola oil in a ziplock bag along with a pinch or two of pepper, pinch or two of salt, a few dashes of onion powder and then one dash of garlic powder and rolled all of the potatoes in it and laid them in a casserole dish. I covered the dish with tinfoil and put it in the oven. BAM!
Since my husband's arrival home is different everyday (as he's in the military) I wanted to make sure they had long enough to cook, since the recipe called for an hour and he could be home at any time really. I decided to cook them in the stove for 45 minutes, then switch them to my crockpot on high until he comes home to keep them cooking and warm.
How they looked
Don't mind the paper plate ;)
How they tasted
My hubby was thoroughly pleased. He scarfed them down and kept "MMmmmm-ing" and telling me they were delicious!! Not too bad for my first crockpot recipe!! The chicken was nice and moist, the bbq was fantastic and the potatoes tasted very yummy. I would advise putting some butter ontop though. They definitely could have stood some of that :) But all in all, delicious dinner! Don't know how I'm gonna top that tomorrow!

Introduction

Hey, my name is Laurel and I'm a lazy cook!
I don't like cooking recipes that take a million ingredients, where I have to spend loads of cash for all the little ingredients that I'll use once and then clutter my cupboards. I like simple, inexpensive recipes. With the help of Pinterest, I will cook my way through easy-cook, few ingredient recipes. I will post the link to the recipes in each blog along with any changes I made and a picture or two... THEN... My hubby's opinion on each meal. Hopefully I'll find some delicious recipes that wives can enjoy making for their families quickly and conveniently!
Enjoy! :)
